Chicken Circassian is one of the wonderful dishes that Egypt inherited from Turkey. It is the most famous among the Turkish dishes in Egypt because many Egyptians who learned how to make it were originally of Turkish origin and came to Egypt during the Ottoman rule. The Circassian chicken dish consists of a whole chicken and broth, and boneless chicken breasts and ready-made chicken broth can be used to save preparation time . This dish can be served warm or powdered. It can be made as a substitute for regular chicken salad sandwiches.

 
INGREDIENTS

🍗 boneless chicken breasts
🍗 3 boneless chicken breasts
🍗 5 cups chicken broth
🍗 Freshly ground black pepper
🍗 1 carrot, peeled and halved
🍗 3 slices of dry bread, cut into pieces
🍗 1 ½ cup crushed walnuts
🍗 1 garlic clove
🍗 ½ cup full fat milk
🍗 Salt to taste

to decorate the dish

 1 tablespoon olive oil
 1 teaspoon paprika
 3 walnut halves
 1 teaspoon green coriander


How to prepare

 Place chicken breasts, 4 cups of stock, salt, pepper and carrots in a large bowl.
 Bring ingredients to a boil over medium to high heat, uncovered.
 Scrape off the top of the liquid as it forms.
 Reduce heat to medium-low and simmer uncovered for 45 minutes or until chicken is fully cooked.
 Mix the remaining cup of broth, bread, walnuts, garlic and milk in a blender to form a smooth paste. Taste and adjust salt and pepper to taste.
 When the chicken is done cooking, cut it in half and let it cool slightly. Reserve the broth to use in another recipe.
 When the chicken is cool enough to handle, chop the chicken into bite-size pieces.
Put the chicken pieces in a serving dish and garnish with walnuts
paste.

🐔 Pour the olive oil into a small bowl and whisk in the paprika. Drizzle over chicken with walnut halves.


  Circassian chicken recipe in a different way


🐔 Put a whole chicken cut into 8 pieces in a large saucepan with carrots, onions, salt and pepper, cover with water and bring to a boil over high heat

🐔 Remove the white rim that forms at the top of the pot..
🐔 Reduce heat to medium and simmer for 45 minutes, until chicken is completely cooked.
🐔 Remove the chicken from the pot, let it cool, then cut the chicken into small pieces.
🐔 Strain the broth through a fine strainer, reserving 1 cup for making the walnut paste.

🐔 Put the remaining broth in the refrigerator to use again. Continue with the recipe above.
🐔 When the chicken is cool enough to handle, chop the chicken into bite-size pieces.
🐔 Place the chicken pieces in a serving dish and decorate them with walnut paste.
🐔 Pour the olive oil into a small bowl and whisk in the paprika. Sprinkle it over the chicken with the walnut halves.
